Christmas Recipe for People with Kidney Disease
Christmas Day is coming? It is not better than enjoying a delicious dinner with your family! However, if you know someone with Kidney Disease, such as Kidney Failure, PKD etc, health recipe seems more important. If you like me, who have no idea how to prepare a delicious and proper meal for your beloved one living with kidney disease, the following Christmas Recipe for Kidney Disease people will be a Christmas Gift for you.
Breakfast Casserole
Ingredients
1/2 teaspoon dry mustard
1/2 teaspoon dried chopped onion
8 ounces reduced-fat pork sausage
8 ounces cream cheese
5 large eggs
1 cup liquid Coffee-mate® non-dairy creamer, original flavor
4 slices white bread, cubed or broken
Preparation
Preheat oven to 325 F°.
Crumble sausage and cook in a medium skillet; set aside.
Mix remaining ingredients in a blender.
Add cooked sausage to mixture.
Pour combined ingredients into a greased 9" x 9" inch casserole dish.
Bake 55 minutes or until set. Cut into 9 portions and serve.

Carbohydrate choices: 1
Cream Cheese Thumbprint Cookies
Ingredients
powdered sugar (optional)
1 cup unsalted butter, softened
2 teaspoons baking powder
1/2 cup strawberry jam
8 ounces cream cheese, softened
2 cups all-purpose white flour
2 tablespoons sugar
Preparation
Preheat oven to 350º F.
In a medium bowl combine flour, sugar and baking powder.
In a large bowl combine butter and cream cheese, and beat until light and fluffy.
Add dry ingredients to cream cheese mixture and blend well.
Roll dough to 1/4” thickness on lightly floured surface.
Cut with 1-1/2-inch fluted or round cutter.
Place 2” apart on ungreased cookie sheet. Press center of each cookie slightly with your thumb and fill center with 1/4 teaspoon jam.
Bake for 10–12 minutes.
Remove from cookie sheet and place on a wire rack to cool.
Sift powdered sugar over top of cookie, if desired.
Spiced Cran-Raspberry Mold
Ingredients
4 packets (4-serving size) sugar-free raspberry gelatin
3-1/2 cups boiling water
2 tablespoons lemon juice
1 cup cold water
1/4 teaspoon ground cinnamon
1/8 teaspoon cloves
one 16-ounce can jellied cranberry sauce
two 11-ounce cans mandarin oranges, drained
Preparation
Completely dissolve gelatin in boiling water and pour into a large bowl.
Add cranberry sauce and stir to dissolve. Add cold water, lemon juice and spices. Mix well.
Chill until slightly thickened, about 1 hour.
Stir in mandarin oranges. Spoon into a large mold or 9" x 13" Pyrex® dish.
Refrigerate until firm, about 4 hours.
